Hato Sablé cookies, Kamakura (Japan)

The Hato Sablé cookies in the shape of a dove are a typical Kamakura souvenir, and are extremely popular everywhere in Japan as a symbol of this quaint town. They come in a yellow paper bag with a cute dove logo on the side. It is said that a Japanese baker fell in love with the butter cookie - brought in Kamakura by a foreigner in 1897 - and after months of testing, was able to re-create it. The baker named the cookie Hato Sablé and gave it the shape of a dove, a messenger from God and also a symbol of the Tsurugaoka Hachiman-gu shrine near his shop. It is a crispy cookie, not too sweet, but with the perfect texture and a delicious buttery flavor, perfect for a tea party.
